For this version I set aside the dried hop pellets that come with the Brooklyn Brewshop kit, with the idea in mind to make a double IPA next time out, and instead I used hops picked the same morning in my backyard added directly to the boil. I used muslin (cheesecloth) bags to reduce the need to filter. I also decreased the amount of honey, perhaps a bit too much as it was lacking for carbonation. Even so, honey is still there in the nose. Maybe I should use that cheap stuff and not the artisanal varieties. I tasted notes of honey and fresh hoppy bitterness. It was well worth the effort.
